DAY 40 of my salad series is a fried halloumi salad with orzo and marinated radishes and cucumbers 🧀🥒<br /><br />recipe (makes 1 serving)<br />1. to a large mixing bowl add 1/4 cup white wine vinegar, 2 tbsp olive oil, 1/2 tsp cumin, 1/2 tsp za’atar, 1/4 tsp red pepper flakes, 1/4 tsp black pepper, 1/4 tsp sea salt, and juice of 1/2 lemon<br />2. mix ingredients together using a whisk and then add 1/4 cup thinly sliced cucumbers and 1/4 cup thinly sliced radishes<br />3. toss to coat, then set aside for 10-15 mins to marinade<br />4. cook 1/2 cup orzo according to package instructions<br />5. add 2-3 halloumi slices 1/8” thick to a pan with 1 tsp olive oil over medium high heat<br />6. cook on each side for 2-3 mins until golden brown and set aside to cool<br />7. plate orzo, then add marinated radishes and cucumbers, halloumi slices and 1 tbsp pistachios<br />8. top with lemon zest and fresh chopped parsley, and enjoy!<br /><br />#nutritionbymeagan #saladsthatarentsalads #halloumiorzosalad #healthyrecipeideas
